Improper storage, inadequate cooking, and unsanitary conditions can cause food spoilage. Unfortunately, you cannot see, smell or taste the culprits - Salmonella, Staphylococcus aureus, Clostridium perfringens, and Botulinum. Nonetheless, these bacteria can cause mild-to-severe intestinal flu-like symptoms. Careful attention to food handling can prevent potential illnesses.

Common Bacteria

There are four common bacteria that can cause food bourne illnesses if foods are not handled properly. These include:

Salmonella - The susceptible foods are meat, poultry, fish, eggs and milk - what we call high protein foods. To prevent salmonellosis you need to thoroughly cook meat, poultry, and fish. Keep raw food separte from cooked food to prevent ! cross contamination. Do not drink raw or unpasteurized milk.
