wise. Place halves, cut side down, on a 15 x 10 x 1-inch jellyroll pan. Bake at 325 degrees for 45 minutes. Peel pumpkin and discard seeds. Puree the pulp in a food processor, or mash thoroughtly.
The following two recipes combine two fall fruits: pumpkin and apples/apple butter.
Pumpking Apple Streusel Muffins
21/2 cups all-purpose flour
2 cups granulated sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda ' 1/2 teaspoon salt
2 egg, lightly beaten
1 cup Solid Pack Pumpkin
1/2 cup vegetable oil
2 cups peeled, finely chopped apples

In large bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt; set aside. In medium bowl, combine eggs, pumpking, and oil. Add liquid ingredients to dry ingredients; stir just until moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling 3/4 full. Sprinkle Streusel Topping over batter. Bake in preheated 350 degrees F oven for 35 to 40 minutes, or until toothpick comes out clean.
