Begin experimenting this winter with quiche. A quiche looks as though a lot of time and effort went into the dish, and only the cook knows the secret of its easy preparation. Many of the ingredients already on hand can be combined to make a quick breakfast, lunch or dinner quiche.
Mini Quiches
1/4 cup low-fat shredded cheddar cheese
1 package. (2.1 ounces) mini filo dough shells
3 eggs, slightly beaten
2 tablespoons fat-free sour cream
1 1/2 tablespoons finely chopped red pepper
1 tablespoon minced parsley
4 to 6 dashes hot pepper sauce
Place a small amount of cheese in each filo shell. Combine eggs, sour cream, red pepper, parsley, and hot pepper sauce. Place about 1 tablespoon of egg mixture over cheese - do not over fill. Bake in preheated oven at 375 degrees F until tip of small knife fnserted in center comes out clean, 8 to 10 minutes. Let stand 10 minutes before serving. Makes 15 appetizers Microwave Chicken
