What is your crowd like? Is it a church fund raiser, a street festival, community event or family reunion? Many gatherings of a large group of people involve food of some kind. Those that prepare food for large events are often occasional quantity cooks.
Occasional quantity cooks are volunteers not employed by a commercial food company and who prepare large quantities of food, some only once a year. Volunteers are critical to the long term success of any food event.
Unsafe food at a single banquet or street festival could ruin the reputation of the organization, put future groups in jeopardy and could create a legal risk. You don’t believe it could happen to you? Although all the events where food is served are conducted with good intentions, the possibility of a disaster is always there. There is lot to learn about safe food preparation and handling.
