Milking was a hard job. If the cows were gentle, you could sit on a one leg stool with the bucket between your knees, and milk with both hands. This got the job done faster.
In the summertime the flies and gnats would always follow the cows. Our mother introduced us to pennyroal (a wild fragrant weed) that discouraged gnats real fast. In the winter it was just one cold job. The cows udders were cold and the wind was always blowing.
The milk had to be strained with cheese cloth to get all the foreign objects out. Everything was done to make it as sanitary as possible.
We had a milk separator, once the milk was strained, it was poured into a large medal bowl. All the other parts had to be put together just right or it would not separate the milk from the cream. One spigot was for cream and the other was for milk. It separated all the fat from the milk until it came out like skimmed milk. This was operated by turning a handle by
