“We are an American restaurant in the new sense, representative of the eating habits and life styles of NOW," added O'Connell. “We've taken the melting pot of American cooking and molded into one exciting, innovative, anythinggoes approach. . . In the 1950s, American cuisine was fried chicken, ham, baked beans and hotdogs. I have a friend who went to an international dinner while she was in college. Everybody was to bring something from their own country and all she could think of to contribute was hot dogs!"

The Inn and other restaurants across the country are working to change that fried chicken and hot dog image, according to O’Connell. "America is a nation of cross cultures. We’re exposed to so much, to so many different types of cuisine. It gives us the freedom to be completely eclectic, to try a completely wide open mixing of cuisines to come up with something unique."
