Untapped Wealth
The Inn's chef is focusing on the development of a regional cuisine inspired by the products available right here in Rappahannock County and combining those products in new ways. “It's a wealth, an untapped wealth, particularly in Virginia and particularly in Rappahannock County. . . In France, each region celebrates its own specialty. It should be the same here. Rappahannock's specialty has to be extended a little further beyond apple butter." Toward that end, the menu at The Inn features morrells. the delectable wild mushrooms that spring up in forests and fields during a much too short growing season. Local gardeners bring in snow peas and green beans just a few minutes off the vines, juicy tomatoes and the freshest of fresh herbs.
