Chinese Eggplant

3 small or 2 medium eggplants (about 2 pounds), unpeeled and chopped into cubes.

1 teaspoon salt.

1 medium sized onion, cut diagonally into thin strips.

1 tablespoon fresh ginger, finely diced. (Fresh ginger is available now in the produce department of grocery stores in Warrenton, Culpeper and Front Royal. Do not substitute dried ginger.)

2 large cloves garlic, peeled and finely diced.
