Most Rappahannock gardeners have dug their sweet potato crop and are seeking for new ways to fix a casserole or side dish.
This week we will look at the history of sweet potatoes, tips, preparation for cooking, buying guidelines, nutritional value, care of fresh sweet potatoes, selection, as well as recipes.
Botanically speaking, sweet potatoes are from the family “ipomoea batatas” and are related to the morning glory. Sweet potatoes are true roots in contrast to Irish potatoes (which are tubers or stems) and grow four to eight inches beneath the soil.
The term “yam” is a synonym for sweet potatoes and is widely used in the sweet potato trade. Actually, all yams grown in the United States are sweet potatoes and the U.S. Department of Agriculture requires that they be labeled as such. In general usage, however, the terms may be used interchangeably.
