foil; bake in a hot oven (400 degrees) for approximatley 15 minutes; reduce the temperature to 375 degrees and bake medium sized sweet potatoes for 45 minutes and larger roots for 60 minutes. Hiey are done when soft upon squeezing.

Many recipes call for cooked sweet potatoes, meaning either baked or boiled. Canned sweet potatoes will also fill this need. They generally are smaller in diameter because of their better canning qualities. Six to eight canned sweet potatoes are approximately the equivalent of four medium fresh sweet potatoes.

Buying Guidelines

When purchasing fresh sweet potatoes, the consumer should select clean, smooth and well shaped roots that are firm, dry, bright and fresh looking.

Uncured fresh sweet potatoes are those marketed during the harvesting season, which normally occurs in late summer and early fall. Those not marketed between August and November are stored under controlled temperature and humidity conditions and are marketed from late November until the harvest season begins again in late August. Cured sweet potatoes are every bit as tasty as the uncured ones and generally are much sweeter.

Canned sweet potatoes are available in vacuum-packed containers (without any liquid), in syrup pack or in solid pack (tightly packed with little liquid). They may be whole, mashed or in cut pieces.
