Preparation for Cooking
Sweet potatoes are one of the most easily prepared of all vegetables and a variety of dishes may be started by using one of these basic cooking methods. To Boil: Fresh sweet potatoes may be boiled with the skin on, which is probably the easiest method. Begin by washing and trimming the sweet potato,
allowing one medium sized potato per serving. Place in enough boiling salted water to cover the potatoes. Cover the pan and allow to boil for 20 to 30 minutes; drain and peel. Cut large yams in half to save boiling time.
To Bake: Another basic cooking method is to bake sweet potatoes in an oven. Again, wash and trim the sweet potatoe, being careful to pat dry; then slightly grease with shortening; arrange on a baking sheet or aluminum
