French Fried Sweet Potatoes
Boil sweet potatoes for 10 minutes. Peel and cut into french fries. Fry in deep fat at 375 degrees for 3 minutes or until fork tender and golden brown. Drain on paper toweling. Sprinkle with a mixture of one tablespoon sugar, 1/4 teaspoon cinnamon and 1/4 teaspoon salt. Serve immediately.
Sweet Tater Puffs
2 cups cooked, mashed sweet potatoes 1/8 teaspoon pepper 1/2 teaspoon salt 1 egg, beaten Milk, if needed 8 marshmallows 1/2 cup crushed cornflakes Beat together sweet potatoes, pepper, salt and egg. Mixture should be Arm but not dry. If dry, moisten with milk. Shape sweet potato mixture around individual marshmallows, then roll each ball in cornflakes. Chill at least one hour. Deep fry in hot fat until golden brown. Drain on paper toweling and serve immediatley. Serves 4.
Sausage & Sweets
1 pound pork sausage 2 1-pound cans sweet potatoes 2 tablespoons butter 1/3 cup brown sugar Shape sausage into 6 patties. Brown lightly on both sides and drain on paper toweling. Slice sweet potatoes and arrange in greased baking dish. Dot with butter and sprinkle with brown sugar. Arrange sausage patties on top. Bake at 350 degrees for 30 minutes. Serves 4 to 6.
Sweet Potato Biscuits
4 tablespoons sugar 4 tablespoons shortening 11/4 cups cooked, mashed sweet potatoes
11/2 cups flour 4 teaspoons baking powder 1/2 teaspoon salt Mix together sugar, shortening and sweet potatoes. Sift together dry ingredients. Add sweet potato mixture to flour mixture and cut in with two knives or pastry blender. Turn onto floured surface and knead lightly. Roll to 1/2 inch thickness, cut and place on baking sheet. Bake at 425 degrees for 15 minutes or until lightly browned. 3^
