The main consideration when buying apples is how they will be used. While there’s no hard and fast rule about apples, certain varieties have become favorites for eating raw, cooking or baking. The Red Delicious is considered by many to be the sweetest eating apple, but the Golden Delicious is equally popular because it is more of an all-purpose apple. Also considered to be good all-purpose varieties are the Stayman and Winesap. The following list may be helpful in determining which variety best meets the needs at hand.
Summer Ram bo: green with pink blush, tart, use for cooking.
McIntosh: red, slightly tart, tender, use for eating, salads, sauce
Golden Delicious: pale yellow, large oblong in shape, sweet, juicy, use for salads, eating fresh, pies
Grimes Golden: green yellow to golden yellow, mild, sweet, use for eating, salads, cooking
Jonathan: red with green patches, small to medium, round, tart, crisp, juicy, use for all-purpose, due to size is perfect for lunch boxes
Red Delicious: brilliant red, large, long, angular shape with five knoblike projections at base, use for salads, eating fresh, decorating
Stayman: dull red, medium to large, round, very firm, tart, juicy, crunchy texture, use for all purposes
Rome: red, medium to large, round and squatty, slightly tart, firm and crisp, use for baking, pies
Winesap: dark red, small to medium, round, juicy, tart flesh, winelike taste, use for eating, cooking, especially frying
York: red, medium to large, flat, lopsided shape, use for cooking, eating, pies
After the purpose has been determined, three things need to be considered in selecting apples - color, surface texture, and ripeness. Since apples come in all shades of reds, yellows and greens, don’t rely on red as the standard for good quality. The color should be bright and vibrant, suitable for the variety.
The surface texture should be free from bruises, blemishes or skin breaks. (Surface resetting - brownish, freckled areas on the skin generally caused by weather - may somewhat mar the appearance of apples, but does not affect quality or flavor).
