Apple Surprise Submitted by Katherine Riley 1/2 c. margarine 1 c. sugar 1 c. flour 1 c. milk 2 tsp. baking powder 2 c. canned or cooked apples 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. ginger 1/2 c. raisins Melt butter in a baking dish. Mix next 4 ingredients into a batter and pour on the melted butter. Mix the spices and raisins with the apples and pour onto the batter. Bake about 25 to 30 minutes in 350 degree oven until batter covers fruit and cake browns. The fruit settles to the bottom of pan and cake comes to the top.
