Pineapple Strawberry Compote You can’t improve on fresh pineapple picked truly ripe and sweet and served in its natural state, but if the pineapple is immature, here’s one way to conceal it. 1 c. strawberries, 2T. water 172 tap. vanilla extract 1/2 c. canned crushed pineapple, no sugar added 1 fresh medium pineapple, cored, pared, cubed Process strawberries, water and vanilla in blender container until smooth; combine with crushed pineapple in large bowl. Stir in fresh pineapple. Chill and divide equally. (Makes 6 servings).
