truss to secure drumsticks. If any stuffing will not fit into hens, place in baking dish along with hens to cook. Place breast-side up in a 1-1/2quart rectangular dish. Brush with 011 and Kitchen Bouquet. Garnish with paprika. Microwave on 70 percent (Medium-high) 18 to 20 minutes, turning each hen 1/2-tum around midway through cooking. Let stand 5 minutes before serving. Makes 2 to 4 servings.

Swiss steak

3 tablespoons all-purpose flour

1/2 teaspoon salt

1/4 teaspoon pepper

2 lb. beef round steak, cut into serving pieces

1 medium onion, chopped

1/4 green pepper, chopped

1 can (8 oz.) whole tomatoes

1 can (6 oz) tomato paste

Combine flour and seasonings in shallow dish. Coat meat in seasoned flour; pound into meat. Place meat in water-soaked clay pot. Place onion and green pepper over meat. Add tomatoes and tomato paste. Cover with water-soaked lid.

Microwave 10 minutes on High. Rearrange meat pieces; recover.

Microwave 55 to 60 minutes on Medium (Simmer), or until meat is fork tender. Let stand, covered, 5 minutes before serving. 4 to 6 Servings

Baked potato skins

6 baking potatoes (about 2 pounds)

3 tablespoons melted butter or margarine

Grated parmesan cheese

Garlic powder

Celery salt

Wash and pierce each potato once with a fork. Arrange on a bacon rack in a circle. Microwave on High 12 to 14 minutes, rotating rack and turning each potato over midway through cooking. Let cool.
