Oil and flour an 8-inch rounds of square baldng pan, or muffin tins. Cream the oil and sugar together and mix in the applesauce and baking soda. Add flour and cinnamon, blending thoroughly. Pour the batter into pan, or make individual cakes in muffin tins. Bake at 375 degrees for 30 minutes for an 8-inch cake, about 20 minutes for cupcakes. Apple Sauce Gingerbread 1/2 cup apple juice (or skim milk) 1 cup brown sugar 1/2 cup molasses 1/2 cup fat-free egg product (like Egg Featers) or 3 egg whites, beaten 1 cup apple sauce 21/4 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons ground ginger 1 teaspoon ground cinnamon 1 large apple (Rome, Beauty, Stayman, or Winesap), peeled, cored and chopped fine. Preheat the oven to 375 degrees and lightly spray a 7 x 11-inch glass baking dish with oil. In a large bowl, beat together the apple juice, sugar, molasses, fat-free eggs and apple sauce. Stir in the flour, baking soda.
