This coming Monday, Oct. 1, at Ted Pellegatta’s Eatery in Sperryville, you’ll get a chance to meet Bertukan Kassa. Come and savor some of her Ethiopian cuisine like wat, a thick stew made with spicy meat and vegetables. This is served with injera, a fermented bread made from teff flour and cooked on a 20” circular grill. The dough is fermented for three days and young girls learn from an early age how to pour it in a spiral fashion onto the grill so that no lumps appear. It’s an art form to be sure. No reservations are required, but stop by or give Ted and Bertukan an estimate of how many will come for Ethiopian dinner on Monday. Ted can be reached at (540) 9879870.
