Rappahannock New* Staff H ritcr This time of year finds many Rappahannock people back in the woods and up rocky hills at their favorite trout-fishing spot. Most trout fishermen learned one way to cook trout and stick to that method for everything they catch.
Joan Cone, cookbook author and food columnist, would like to remedy that situation. Joan writes a monthly column for Virginia Wildlife, the Virginia Commission of Game and Inland Fisheries publication, and has written several cookbooks with instructions on how to prepare everything from raccoons to catfish. One of her most welcome contributions is a fool-proof method for freezing trout and other fish. Joan says that with her method, you can keep fish in the freezer for at least a year, with no loss of quality.
