Diana Bird had a visitor from Uruguay who suggested that she make Pannetone for holiday giving and entertaining. Diana said that she'd been making this festive bread in coffee cans and using walnuts, but she said that she thought pecans would do fine as a substitute. I tried the pecans, and they taste wonderful. This recipe makes enough for 3 1-lb. coffee can-size loaves.

Pannetone

Combine and let stand for 3-5 minutes:

1 cup 105-115 degree water

2 packages active dry yeast

Sift and stir in:

1 cup all-purpose flour

Cover this sponge and let rise in a warm place until it has doubled in bulk. Beat until soft:
