Have all ingredients at room temperature. Sift dry ingredients together into mixing bowl. Add shortening and buttermilk and vanilla. Mix 200 strokes by hand (or 2 minutes on electric mixer at low speed). Scrape from sides of bowl while mixing. Add eggs and beat 100 strokes (or 1 minute on electric mixer). Add pecans and beat 100 strokes (or 1 minute on electric mixer). Pour into 2 greased 8-inch cake pans and bake in moderate oven (350 degrees F.) for 30 minutes. Frost as desired.
