slightly in how they are processed. Whole smoked turkey, usually sold frozen, is the whole bird that has been seasoned, cured and usually fully cooked using a hickory wood chip smoking process. A smoked turkey breast is processed the same way. It is available fresh or frozen. A turkey ham is an exclusively boneless, skinless turkey thigh meat that is also cured, seasoned and hickory smoked. These smoked turkey products are almost always fully cooked, but to be sure, read the label. Those that are fully cooked need only to be thawed and sliced. But, like a pork ham, the flavor really comes alive when they are heated to an internal temperature of 140*F.

The flavor of smoked turkey products is somewhere in between fresh turkey and smoked pork ham. It is flavorftil, but not too overpowering. It makes excellent sandwiches or can be substituted in any recipe calling for cooked turkey or ham.

Besides the terrific flavor, smoked turkey products are great news for calorie counters. A three-ounce serving has just 106 calories, which is low enough to eiyoy a second helping. It is a very good source of protein, riboflavin, niacin and calcium. Also, it is practically fat free and lower in saturated fats than many other meats. Good nutrition never had so few calories and tasted so good.
