To make a basic pumpkin puree, pop the entire, washed vegetable on a baking sheet into a 350-degree oven and bake until tender. The time for baking will vary, but generally a 3-pound pumpkin will take 1-1 hours. Cut the pumpkin in half, scoop out and discard the seeds and fibers, pull off the skin (or spoon out the flesh). Press the meat through the medium disc of a food mill into a bowl, or you may prefer to puree the meat in a food processor.

If you prefer, you can cube, seed, and peel the pumpkin, c ook it for 1520 minutes in a vegetable steamer, then puree it. This method is faster, but results in a more liquid puree. A 3-pound pumpkin yields about three cups of puree. To freeze, let the
