high fidelity to one floral source.

There are numerous places to buy honey in Rappahannock County including the local fruit stands, gift shops and beekeepers.

The following recipes are ways to use some of our delicious Virginia honey. If you would like additional information on cooking with honey, call the Extension Office at 675-3619 and request a copy of the Virginia Honey Guide published by the Virginia Department of Agriculture and Consumer Services.

Honey whole wheat bread

2 pkgs. active dry yeast

5 c. warm water (110 to 115 degrees)

6 tblsp. lard or other shortening

1/4 c. honey

4 c. whole wheat flour

1/2 c. instant potatoes (not reconstituted)

1/2 c. nonfat dry milk

1 tblsp. salt

6 1/2 to 8 c. sifted all-purpose flour

Sprinkle yeast on 1/2 c. warm water; stir to dissolve.

Melt lard in 6-qt,. saucepan; remove from heat, add honey and remaining 4 1/2 c. warm water.

Mix whole wheat flour (stirred before measuring), instant potatoes, dry milk and salt. Add to saucepan; beat until smooth.

Add yeast and beat to blend. Then with wooden spoon mix in enough all-purpose flour, a little at a time, to make a dough that leaves the sides of the pan. Turn onto lightly floured board and knead until smooth and satiny and small bubbles appear, 8 to 10 minutes.
