Basic types
The four basic types of potatoes available to consumers are russets, long white potatoes, round red potatoes and round white potatoes. Potatoes in supermarkets are also tabled “new” potatoes. This is not a variety, but simply potatoes that come to market directly from the field and are not placed in storage. They are generally harvested to be smaller in size with a unique skin texture and are available all year in limited qualities.
