Selecting peaches
Look for peaches with fresh creamy or golden undercolor. A rosy blush is pretty, but “red” does not mean “ripe” and the varieties’ blushes differ. Avoid peaches with wrinkles, brownish spots, or traces of green on their skin.
There are two types of peaches: clingstone and freestone. A clingstone peach does just what its name says - the flesh (fruit) clings to the stone (pit). Clingstone peaches are grown primarily for processing. In freestone peaches, the predominant fresh variety, the fruit does not cling to the pit. More than 25 peach varities are grown in orchards throughout Rappahannock County. Some of the most popular ones are sunhighs, rio-oso-gem, lorins, marqueens, and redhavens.
