Food Intolerances

In allergies, only one body mechanism id involved, the immune system. In intolerances, any one of several mechanisms can underlie the body’s inability to handle a specific food.

The two msot frequently encourtered food intolerances are to lactose, the primary sugar in milk, and to gluten, a protein in wheat.

Lactose Intolerance

Lactose intolerance occurs when a person has a deficiency in the enzyme lactose, which is needed to break down the milk sugar lactose into a simpler form that can be absorbed into the bloodstream. The results, though not usually dangerous, may be distressing. The buildings of undigested lactose has a laxative effect. Symptoms can range from mild distension and nausea to abdonimal cramps and diarrhea.

Who is likely to experience it? Certain ethnic groups are more susceptible than others, though why this is true is not known. Lactose intolerance is common among people of African, Asian, American, Indian and Mediterranean heritage; rarer among those of Northern European descent.
