Freezing: Pork wrapped in plastic film at the market can be frozen as purchased for up to two weeks. For longer storage follow the steps below. Canned hams and canned picnics should NOT be frozen. Use one of these freezer wrap materials: specially coated paper (wax side goes against meat surface); heavy duty aluminum foil; heavy duty polyethylene film; or heavy duty plastic freezer bags. Overwrap or re-wrap pork in convenient portions. Wrap tightly, pressing out as much air as possible. Label with name of cut, number of servings and date. Freezer at 0 degrees or below.

Low-Fat Preparation

Start with the leanest pork cuts, those having “leg” and “lion” in the name. Calories, fat and cholesterol can be further reduced by trimming all external fat from these cuts before cpoking.
