When portable meals go out the door, be sure that proper food safety goes along too. When planning breakfast to go, brown bag meals, tailgate treats or any events where food is to be transported, extra care needs to be taken. In order to keep food items refrigerator-cold, pack them on ice or commercial coolant in an insulated bag or cooler to keep them 40 degrees F or lower. As long as the ice or coolant lasts, the food should be kept cold enough.

Whether it’s breakfast in the car, lunch eaten in between classes or a brown-bag dinner before band practice... by providing meals-to-go, you know that your family is getting the proper fuel they need to keep their engines running all day long.

Following you will find two easy to prepare egg related ideas.

Pasta Frittata

4 medium tomatoes, cut into 1/2 inch thick slices

3 tablespoons Parmesan cheese

1 /2 teaspoon salt

1 /4 teaspoon hot sauce

4 eggs

2 egg whites

1 tablespoon cilantro

1/2 teaspoon garlic powder

1 cup cooked spaghetti (about 5 ounces uncooked pasta) non-stick cooking spray

Arrange tomato slices in a single layer on a baking sheet lined with aluminum foil. Bake at 450 degrees F for 40 minutes. Peel and discard skins.

Combine 1 tablespoon Parmesan cheese, salt, hot sauce, eggs, egg whites, cilantro and garlic powder in a large bowl; stir well. Stir in tomato slices and spaghetti; set aside.

Coat skillet with cooking spray and heat over low heat. Add egg mixture, and cook 15 minutes or until set
