By CINDY MAHAN Rappahannock Neva Staff Writer It’s getting to be that time of year when com, grown by local farmers, is available at roadside stands in the county. Silver Queen com, the white com which seems to be most people’s favorite, is so plentiful and reasonably priced that it makes sense to buy at least a dozen ears at a time. Local restaurant chefs have shared some of their favorite com recipes so that our readers may enjoy fresh com in many different ways. Many people, however, agree that the best way to enjoy fresh com is this recipe: Put on a large pot of water to boil, pick com and return to kitchen husking as you go. Boil briefly and enjoy! For variety, though, following are some other excellent com recipes: Corn and Barley Risotto Richard Mahan Bleu Rock Inn Note: A traditional Italian risotto uses rice as the basic grain, but Chef Mahan has chosen barley for this . recipe.
