1 cup 100 percent olive oil (extra virgin will not work)
1/2 cup rice wine vinegar or white wine vinegar
1/2 bunch cilantro, chopped fine
Salt and,freshly cracked pepper to taste
On a charcoal grill, grill com until they just begin to brown and set aside to cool. In a small mixing bowl, add olive oil, vinegar, cilantro, salt and pepper and whisk thoroughly. Once corn has cooled, take a sharp knife and carefully slice the kernels off the cob. Toss the corn with the remaining ingredients and the dressing and chill. Serve cold.
Note: Do not use extra virgin olive oil as it will congeal in the refrigerator.
