2 packages (7.5 ounces each) refrigerated buttermilk biscuits
Preheat oven to 350 degrees. In a non-stick skillet, add ground beef, onion, green pepper, salt and black pepper; brown approximately 10 minutes. Pour off drippings. Stir in tomato sauce. Remove skillet from heat. Stir Parmesan cheese and half the Cheddar cheese into the meat mixture. Spray a 7” by 11” (or 9” square) glass baking dish with cooking spray. Layer one package (10 biscuits) in bottom of dish, pressing slightly to flatten and seal together. Spread beef mixture over biscuits. Top with second package of biscuits, pressing slightly to flatten. Sprinkle with remaining Cheddar cheese. Bake for 20 minutes, or until biscuits are golden brown. Makes 6 servings.
