trom ueorgetown Farm’s breeding program. The cross between the farm’s prizewinning Polled Herefords and Piedmontese, a muscular breed originating in Italy, produced a hearty disease-resistant and lean breed known as Piedmontese Silver.
Success with the Piedmontese Silver led to expansion of the low-fat line by the addition of the bison around 1990.
Both the bison and the Piedmontese Silver are raised without antibiotics, growth hormones, and steroids, and both are remarkably low-fat.
