Now that you’re hungry for the delicate sweet flavor of apple juice and sauce, here are two recipes to try. The first is a congealed fresh fruit salad teaming applesauce with fresh spring fruits. The second recipe would be terrific on a spinach salad, laden with crisp bacon bits and sliced hard-cooked egg.

Gingered fruit salad

1 package (6 oz.) lemon-flavored gelatin 1 cup boiling water 2 cups ginger ale 2 cups applesauce 1 cup cantaloupe chunks 1 cup sliced strawberries 1 cup white seedless grapes, halved

Dissolve gelatin in boiling water; let cool slightly, then add ginger ale. Chill until mixture begins to thicken, then fold in remaining ingredients. Pout into 6-cup (lV2-quart) mold or dish. Chill until firm. Makes 6 to 8 servings.

Dijon apple dressing

1 cup apple juice 1 egg, beaten 1 tablespoon flour 1/4 cup sugar 2 tablespoons melted butter 2 tablespoons lime juice 1 tablespoon Dij on-style mustard

Combine sugar and flour in 1quart saucepan. Combine apple juice with beaten egg and add to saucepan, along with remaining ingredients. Cook over medium heat, stirring constantly, until mixture thickens. Chill well before serving. Makes about 1 Vi cups.
