Amy 8 Corn Muffins

1/2 c. sifted all-purpose flour

2Vz tsp. baking powder

1/2 tsp. salt

1T. sugar (optional)

IVt c. com meal

3 T. melted butter

3/4 c. milk

Sift together flour, baking powder, salt and sugar. Then stir in com meal. In a separate bowl, beat the egg thoroughly, then stir in melted butter and milk. Combine with flout mixture, using as few strokes as possible (the batter will be lumpy). Spoon into greased muffin this. Bake in a preheated 425 degree oven fot 20 to 25 minutes or until a toothpick tested in center comes out dry.

Amy’s Plain Muffins

4 T. melted butter or maragine

2 c. minus 2 T. all-purpose unbleached flour

1T. baking powder

3/4 tsp. salt

1T. sugar

1 c. milk

2 eggs, well beaten

Preheat the oven to 400 degrees. Melt the butter and grease the muffin tins. Combine the dry ingredients in a bowl. Mix the milk with the beaten eggs and stir in the melted butter. Combine the two mixtures as quickly and deftly as possible, stirring just enough to mix them. Spoon into the prepared pans. The muffin tins should be about half full. Bake immediately for 15 to 20 minutes, depending on the size of the tins. Turn out immediately. Muffins can be reheated or frozen for eating at a later date.

Banana bread

2 eggs

1/3 c. soft shortening

2 ripe bananas, peeled and sliced

2/3 c. sugar

13/4 c. sifted all-purpose flour

3/4 tsp. soda

lYt tsp. cream of tartar

1/2 tsp. salt

Start oven at moderate (350 degrees). Grease 8x4-inch loaf pan.

Combine eggs, shortening, bananas, and sugar in glass container of blender. Cover and blend about 30 seconds or until smooth. Sift dry ingredients together into mixing bowl. Pour blender combination over dry ingredients. Stir only until combined. Pour into greased loaf pan.

Bake about 45 minutes, or until lightly browned. Turn out of pan to cool on cake rack. When cool, wrap in waxed paper and chill several hours or overnight before slicing. Makes 1 loaf.

The Virginia deadline for entries in the Take Pride In America Awards Program is Thursday, October 1. The awards will recognize outstanding efforts conducted by individuals and groups on behalf of our nation’s public lands and natural and cultural resources. Virginia winners will be entered in the national contest.

Forty-two states and two U.S. territories have joined nine federal agencies and numerous private sector groups in the public awareness program. Governor Baliles has designated the Department of Conservation and Historic Resources to coordinate the program in Virginia.

To be eligible for a Take Pride In America award, an individual or group must demonstrate involvement in caring for federal, state or local lands, or illustrate citizen or group initiative toward greater awareness and wise use of public lands, or foster recognition of citizen responsibility and/or encourage personal attitudes of stewardship and active involvement for the public lands or resources.

The awards program is open to any individual and to public and private sector groups, large or small, which have contributed to increased awareness and wise use of public

lands or resources. The projects must have been initiated, accomplished or ongoing in 1986 or 1987.

Entries should be mailed to the Virginia TPIA Program, Department of Conservation and Historic Resources, 1100 Washington Building, Richmond 23219. There is no entry fee. All materials become the property of the awards program and will not be returned.
