Cinnamon candy apples

8 medium red apples

8 6-inch wooden skewers

3 cups sugar

1/2 cup light com syrup

1/2 cup water

1 drop oil of cinnamon

1 tsp. red food color

Wash and polish apples. Remove stems and insert skewers in stem end of apples. In top of double boiler, combine sugar, com syrup and water. Place directly over moderately high heat. Cook, stirring constantly, until mixture boils. Then cook without stirring until candy thermometer registers 285 degrees, or a small amount of the syrup separates into threads that are hard but not brittle when dropped into very cold water.

In the meantime, heat water in bottom of double boiler. Remove syrup from heat when cooked and add flavoring and food color. Stir only to mix. Place pan of syrup over warm water in double boiler. Hold each apple by skewer end and quickly twirl apples in syrup, tilting pan to cover apples with syrup. Remove from syrup. Twirl apples to spread syrup smoothly. Place ons lightly buttered cookie sheet to cool. * Store in a cool place* Makes 8.
