Preheat oven to 375 degrees. Roll out dough into a rectangle about 1/8-inch thick. It tends to stick, so ease it free from the board with a spatula. You can also roll this between two sheets of waxed paper.

Cut dough into strips about 2 inches wide. Glaze with egg anil

sprinkle with salt or nuts. Cut strips into triangles or cut into 1-1/2-inch circles with a cookie cutter. Place on parchment paper-lined cookie sheets and bake 12-15 minutes. Lift sheet of paper off cookie sheet and place on cooling rack.
