Success with muffin baking requires only a few simple instructions. A good muffin should have a uniform texture, and the top should rise to a rounded peak. The trick to making them is to handle the batter as little as possible and to make sure the oven is hot. Too much stirring will yield a heavy product. The lumps will disappear in the baking.
