Tips for success

• Preheat the oven, prepare the pan and measure out all the ingredients before you begin. Since the baking powder begins to act as soon as liquid is added, muffins should go into a hot oven immediately after the batter is mixed.

• Use a light folding motion to partially combine the liquid ingredients with the flour-sugar mixture. The liquid will be absorbed, leaving just enough flour to coat the fillings, preventing them from sinking. Overmixing generally causes toughness, so do not aim for a perfectly smooth batter.
