from Cincinnati, came through San Antonio enroute to wiregrass emptiness which was later called Houston. He wrote at length about chili con came. He called it a stew made by the poorer classes “with nearly as many peppers as meat.”

According to historians, that stew consisted of “bite-sized beef cooked slowly with the pulp of chili peppers, crushed oregans, ground cumin seeds and fine-chopped cloves.” There was debate concerning the presence or absence of suet.
