Long before there was a United States, the best chili was eaten in San Antonio by starlight or by torch flame on the city’s plazas. It was served by folk-heroines called “chili queens,” who doled out the red from clay pots to customers who sat at long wooden tables.

Chili is a romantic dish as well as a nutritious one. The addition of beans to a pot of chili seems to be a matter of personal preference.

A famous San Antonio recipe is known as Argzle chili. It takes real courage to eat this dish.

Argzle chili

“One pound each of lean beef and pork. Cut into cubes with salt, pepper and flour. Fry in bacon fat until brown. Remove from fat and fry two chopped onions'with cut-up green and red peppers. Add flour to same fat to make gravy. Add can of tomatoes, two teaspoonfuls chili powder, one teaspoonftil cumin seed. Add meat and simmer until tender. Additional water may be needed before done.”
