For every pound of meat, use 1 pound potatoes, 1 onion, 1 carrot, 1 stalk of celery, 1 turnip and 1 cup water. Bone a shoulder and neck of lamb and cut into small pieces, trimming off surplus fat.

Shake the meat in flour and sear in oil until wellbrowned. In a deep pan, put a layer of meat, a layer of sliced potatoes, some of the vegetables and seasoning. Repeat in layers and add just enough water to cover. Cover tightly and simmer for 2'/a hours, adding water if necessary.
