Snaffles Scrambled
Eggs with Salmon
12 eggs
2 ounces butter
one-third lb. smoked salmon-sliced
salt and pepper
Mix jggs well, seasoning with salt and pepper. Put saucepan in a pan of hot water, and stir mixture well until eggs begin to coagulate. Add butter bit by bit, stirring all the time. When eggs have a creamy consistency, put immediately on heated platter and cover with slices of smoked salmon. Serve immediately. This is a very good lunch or supper dish with a green salad.
