Strawberry Angel Pie
4 egg whites 1/4 teaspoon cream of tartar 1 cup sugar 11/2 cups heavy cream 2 pints strawberries, washed, hulled and sliced
In a medium bowl beat egg whites and cream of tartar until foamy. Gradually beat in sugar and continue beating until stiff, glossy peaks form. In a greased 9-inch pie plate, spread meringue over bottom and sides. Spread 1/4 inch thick on bottom and 1 inch thick on sides. Bake at 275 degrees for one hour. Turn off oven and leave meringue in oven until cool. Whip cream. Spread half of whipped cream over meringue. Top with half of strawberries. Repeat layers. Refrigerate until served. Makes one 9-inch pie.
