The word pumpkin is derived from either the Greek word “pepon” meaning edible gourd or the French word “pumpion” meaning cooked by the sun. It is a member of the squash family and can be substituted in most winter squash recipes as well as many of the sweet potato recipes. There are many dessert recipes available but pumpkin cooking should not stop there. For example, Russian cooks combine pumpkins, meats and fruits; Latin America cooks use them in casseroles, and Northern African cooks include pumpkins in many recipes.

Be creative when including pumpkin on your menu. A cooked pumpkin makes an attractive serving container while holding in the heat. You can either prepare your favorite mixture and reheat it for the last half hour in the shell or stuff the completely cooked shell with the hot mixture made from another pumpkin and serve with a pumpkin sliver on the side. For example, rich vegetable soup can be made from a leftover holiday turkey and served in a pumpkin shell. A hearty beef stew can be jazzed up by adding chunks of pumpkin and pears. It does not have to be served in the shell, but it looks so pretty and it is a good way to use those big field pumpkins.

After a heavy dinner, prepare a light pumpkin dessert such as chilled pumpkin souffle laced with orange liqueur and topped with a smooth cranberry sauce. Or, serve a super easy pumpkin mousse which contains orange juice, heavy cream, unflavored gelatin, cinnamon, nutmeg and grated orange rind. Pump
