Sweet Potato Souffle
2 c. mashed potatoes (2 cans) 1/2 c. melted margarine 1 c. sugar 1 tsp. vanilla 1/2 tsp. salt 2 tsp. flour 2 eggs, well-beaten 1 tsp. lemon Mix all ingredients together. Topping: 1 c. brown sugar 1/2 c. oleo, melted 1 c. chopped pecans 1/3 c. flour Mix all ingredients. Sprinkle over top of potato mixture. Bake at 350 degrees for 35 minutes. Can be frozen. Sweet Potato Casserole
3 c. cooked, mashed sweet potatoes
1/2 c. brown sugar 1/2 tsp. salt 1/2 c. milk 2 eggs, beaten 1/3 stick margarine 1 tsp. vanilla Mix all ingredients well; pour in casserole dish. Top with: 1/2 stick margarine 1 c. brown sugar 1/3 c. flour 1 c. nuts 1 c. coconut Melt margarine. Add other ingredients. Mix well and pour over potato mixture. Bake at 350 degrees for 30 minutes.
