He showed a chart that demonstrated that as prices for other meats have held steady, and prices for beef have risen, sales of beef have dropped off while sales of other meat, such as pork and poultry have increased.
He noted that buyers say beef is too fat. They don’t want to pay for six inches of back fat, he said. He noted that cattle are being slaughtered weighing from 800 to 1,600 pounds. “This doesn’t work well,” he said. “There is too much variation in the product.”
He suggested producers look to cutting costs, not overall, but per pound of beef produced.
