Eggs and Cholesterol
The egg contains most of the essential vitamins and minerals except one-vitamin C. These nutritional benefits are often forgotten because egg yolks contain dietary cholesterol. Since many health recommendations suggest less than 300 mg. dietary cholesterol a day, it was easy to see why eggs, at 275 mg. or almost the maximum allowed, were often limited.
But with new laboratory techniques to measure the amount of cholesterol in the yolk and additional information on the relationship of dietary cholesterol and fat to blood cholesterol, eggs in moderation still are part of a balanced diet. New data indicate that a large egg has about 213 mg. of cholesterol and five g. total fat. Based on this new data, the American Heart Association has increased its recommendation to a maximum of four eggs a week rather than three.
