Currently the state has strict regulations on what kinds of milk its citizens are allowed to purchase and raw milk is not one of them. However, in the United States sales of raw milk are legal in 28 of the 50 states. Recent activity in the General Assembly has a number of people concerned whether or not they will be able to obtain the quality of milk they desire.

“Earlier this year a list of regulations was composed by the Virginia Department of Agriculture that was very restrictive to raw dairy products and which even went so far as to make it illegal for a farmer to drink raw milk from his own cow,” said Ellen Ussery of Hume, Va. While this is one of the more severe restrictions that has been rescinded it still remains illegal to sell raw milk in the state of Virginia, no matter how far you go to inform the purchaser of the quality of the product.

“Raw” milk is milk that has not undergone any form of pasteurization or homogenization. Pasteurization is the process of heating milk to certain temperatures for certain amounts of time in order to kill harmful bacteria. Homogenization is a process that breaks down butterfat globules so they do not rise to the top.
