Thus, he said, the racehorse is capable of listening to cues and clucks from his rider as well as hearing the looming steps of a rival hot on his heels. “The cupped shape of the ear literally collects data from the environment,” McKenzie said.
Taste and smell
The sense of smell is highly developed in the horse and serves primarily as a tool of recognition and to satisfy curiosity. Their sense of smell and taste make it possible for horses to survive on rough forage conditions, not ingesting poisonous plants but rather selecting for nutritious grasses.
“We’ve done some research on taste at the MARE center,” said Dr. Burt Stanier, a Virginia Tech professor based at Middleburg’s Agriculture and Research Center. “If I put out a tub of high-fat, high-fiber feed, and a tub of plain old sweet feed, dripping with molasses, most horses select for the sweet taste. But having a horse gulp down their feed is not the healthiest.”
Research shows that the high-fat, high-fiber diet maximizes performance, Stanier said. “The high-fiber feeds take a little longer for the horse to eat, but that is a good thing, since they won’t wolf it down and possibly choke.”
